Background

Many wine growers who are interested to vinificate their wine in wood would like to test it in conical wood vats.
Seguin Moreau has developed a solution which is economically and easy: the Micro- Vinificator It is the ideal compromise between the advantages of a vinification in wood vats and the control which offers a 600 l barrel. Typical for it are the gentle treatment of the grape juice and a gentler extraction of the grapes.

The wood and its sensorial attributes:

The oak wood (Quercus Sessilus) comes from state-owned forests of France which are under the supervision of the national forestry commission office. The staves were split to proven Seguin Moreau tradition so that a high longevity and density is guaranteed, as well as 42 mm staves for an unusual thermal stability is provided.

The Toasting

To avoid the risk of green tones at the beginning of the Vinification a light toasting is not recommended.

A strong toasting should be avoided to prevent the influence of roast flavors at the beginning of the maturation as well as to obviate the breakdown of the lignin which guarantee the sensibly use of the Vinification of 7 or 8 years.
Long toasting promotes the use, because the Micro-Vinificator shows a tool for long benefit also to optimize the deep interaction between wine and wood.

Our recommendation

The Micro-Vinificator is a high end tool for the ambitious wine makers who might produce a top wine beyond their standard production which is based on an amount from about 500 kgs of grapes. The vinificator offers all advantages of a vinification in wood vats.

The advantages for your wine

The Micro-Vinificator turns on a stable wood base on own axle, while the integrated high-grade steel fins move the grape juice without destroying the grapes.
Pumping systems and cooling systems are not required, because the fermentation is longer than in a high-grade steel tank and the temperatures remain of course stable.

The color: Anthocyamine are bound by the combination with the tannins, as well as by the micro-oxidation which is released by the natural osmosis.

The aromas: the Micro-vinificator generates impressive, depth-active wine aromas which strengthen the "Terroir" element in the wine.

The taste: the wines are fantastic in the palate with a structure which hides nothing of her substance. The Tannins are discreetly and their rigor is reduced. The finish is comparable with "Haute Futaie“ barrels, characterized by a gentle mark of black fruits.
